Why does the world love Paris? For the fashion? Mais oui. For the romance? Bien sur. And at The Chopping Block, we love Paris for the food! With our Chefs as your guide, you'll practice classic cooking techniques to create your own elegant French meal.
Frisée, Hazelnut and Goat Cheese Salad with Warm Bacon Vinaigrette; Trout Almondine (Sautéed Trout with Toasted Almonds, Lemon and Chives); Roasted New Potatoes with Truffle-Parsley Butter; Strawberry Financier (Strawberry Almond Cake).
Skills Covered in Class Include: Getting Familiar with French Cooking Techniques; Making Vinaigrette; Balancing Flavors; Selecting and Sautéing Fish; Preparing a Pan Sauce; Selecting and Roasting Potatoes; Working with Fresh Herbs; Mixing Cake Batter; Whipping Egg Whites; Determining Cake Doneness.
When signing up, you'll have the opportunity to pre-order a bottle of our Meursault "Les Narvaux", White Burgundy, Burgundy, France. Rich, round and elegant, from France's "Slopes of Gold", the world's finest Chardonnay vineyards. With purity of flavor, restrained power and endless finish, this classic beauty is delicious with seafood, white meats and poultry, and dishes with mushrooms, butter and cow's milk cheese. You'll also have the option to peruse our extensive wine list upon arrival.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately. All participants in class must be at least 18 years old, or 21 years old if pre-purchasing an adult beverage.
