As we shed our heavy coats, it's time to shed winter's heavy roasts, grills and sauces for lighter meals. But light doesn't mean boring at The Chopping Block! Along with our Chef, you'll learn to select the best of the season's harvest, and how to infuse your dishes with the vibrant and delicious flavors of Spring.
Endive-Arugula Salad with Shaved Fennel and Goat Cheese; Almond and Herb-Crusted Halibut with Sautéed Mushrooms and Leeks; Sweet Pea Risotto with Parmesan; Lemon and Whipped Cream Tartlets.
Skills Covered in Class Include: Getting Familiar with Spring Produce; Preparing Vinaigrette; Balancing Flavors; Selecting and Roasting Fish; Determining Fish Doneness; Making Nut Breading; Working with Fresh Herbs and Arborio Rice; Sautéing Mushrooms; Making and Baking Custard; Whipped Cream.
When signing up, you'll have the opportunity to pre-order a bottle of our reserve Montaudon Brut, Champagne, France, NV. Rich, satisfying and complex, not bone-dry, with creamy texture, long apple and baked biscuit flavor and juicy finish. The classic cocktail and complement to Life's finest meals and moments. You'll also have the option to peruse our extensive wine list upon arrival.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately. All participants in class must be at least 18 years old, or 21 years old if pre-purchasing an adult beverage.
