Gumbo with Crawfish and Andouille Sausage; French Onion Soup with Gruyere Crouton; Spicy Three Bean Turkey Chili; Red Lentil Dal.
Skills Covered in Class Include: Getting Familiar with Cajun Creole and Indian Ingredients; Making Roux; Selecting Shellfish, Sausage and Ground Meat; Caramelizing Onions; Balancing Flavors; Working with Spices, Dried Beans and Lentils.
During class students will sample all the dishes prepared by the chef.
