Learn how to whip up these awe-inspiring pastries in your own kitchen in no time! Don't let the fancy French descriptions fool you... these really are approachable desserts for the home cook.
Chocolate Pot de Crème; Raspberry and Hazelnut Mille Feuille (Puff Pastry Layered with Pastry Cream, Hazelnut Royal Icing and Raspberry Jam); Pear-Frangipane Tart (Almond Custard Tart); Paris-Brest (Pâte à Choux Ring) with Cointreau-Infused Diplomat (Pastry Cream with Whipped Cream).
Skills Covered in Class Include: Understanding Baking Ingredients; Tempering Eggs; Preparing and Piping Pâte à Choux Dough; Making and Baking Custard; Whipping Cream; Working with Almond Paste; Making Glazes; Working with Puff Pastry; Selecting Chocolate; Using a Piping Bag.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
