Kale and Shaved Brussels Sprouts Salad with Apples and Hazelnuts; Smothered Bone-In Pork Chops with Caramelized Onion and Dried Cherry Relish; Scalloped Potatoes; Gingerbread-Pear Upside-Down Cake.
Skills Covered in Class Include: Preparing Vinaigrette; Working with Dark Leafy Greens; Selecting and Sautéing Pork; Determining Meat Doneness; Making Pan Sauce; Caramelizing Vegetables; Selecting Potatoes and Pears; Understanding Baking Ingredients; Mixing and Baking Batter; Determining Cake Doneness.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
