Bacon-Wrapped Dates with Balsamic Glaze; Shrimp Fritters with Tarragon Aioli; Spanakopita (Spinach and Feta-Filled Phyllo Pastries); Cocktail Meatballs with Spiced Cranberry Sauce; Parmesan Cheese Gougères.
Skills Covered in Class Include: Selecting Shrimp and Ground Meat; Pan Frying; Making Cold Emulsions; Working with Phyllo Dough; Balancing Flavors; Preparing Pâte à Choux.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
