Making pies isn't as hard as you might think! Get tips from a pro on how to make tender, flaky crusts, wrap them around sweet and savory fillings, and bake them to golden perfection.
Perfect Pie Dough; Cranberry Curd Tart with Whipped Cream and Candied Orange Zest; Individual Dutch Apple Pies; Sweet Potato Hand Pies with Maple-Walnut Glaze; Mini Galettes with Italian Sausage, Swiss Chard and Gruyere Cheese.
Skills Covered in Class Include: Making and Rolling out Pie Dough; Making Hot Butter Pastry; Preparing Curd, Streusel Topping and Glazes; Using Eggs as a Thickener; Whipping Cream; How to Candy Citrus Peel; Making Fruit Fillings; Working with Spices and Dark Leafy Greens.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 4 people.
