Watercress Salad with Pears, Goat Cheese and Port Wine Vinaigrette; Sautéed Pork Chops with Mushrooms, Pearl Onions and White Wine-Mustard Reduction; Butternut Squash and Sage Stuffing; Flourless Chocolate Cake with Red Wine Caramel Sauce.
Skills Covered in Class Include: Making Vinaigrette; Balancing Flavors; Selecting and Sautéing Pork; Determining Meat Doneness; Preparing a Pan Sauce; Working with Root Vegetables; Preparing Stuffing; Whipping Egg Whites; Working with and Selecting Chocolate; Caramelizing Sugar.

Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
