The ultimate summer grilling experience! Grilling shellfish on gas and charcoal grills is not only possible, it's approachable and delicious! We'll take all of the anxiety out of the equation by teaching you how and where to purchase shellfish, and how to masterfully cook it up to perfection over an open fire. This menu just happens to be gluten free!
Grilled Shrimp, Scallop and Fennel Salad with Lemon Vinaigrette; Grilled Mussels with Grilled Italian Sausage and Warm Tomato-Basil Sauce; Grilled Fresh Lobsters with Cilantro-Chili Butter and Elotes (Grilled Corn with Parmesan Cheese and Lime).
Skills Covered in Class Include: How to Set up Your Grill; Selecting and Grilling Shellfish and Sausage; Determining Shellfish Doneness; How to Butcher a Lobster; Making Vinaigrette and Tomato Sauce; Working with Fresh Herbs; Preparing Compound Butter; Grilling Corn.
Grilling classes take place outdoors on our patio, so please dress accordingly. Because they are outdoors, the classes are therefore subject to weather cancellation. In the event of a cancellation, all participants will be contacted by phone and email no later than 10am (for lunch-time classes) and 2pm (for evening classes) on the day of class. Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
