Asparagus-Leek Bisque with Crème Fraîche; Salad Lyonnaise (Frisée Salad with Bacon and Poached Eggs); Croque Monsieur (Ham and Gruyere Cheese Griddled Sandwich); Strawberry Clafoutis.
Skills Covered in Class Include: Getting Familiar with French Cuisine; Making Pureed Soups; Using Flour as a Thickener; Working with Fresh Herbs; Making Warm Vinaigrette; Balancing Flavors; Poaching Eggs; Griddling; Making Baked Custard.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
