Frisée Salad with Asparagus, Oranges and Warm Bacon Vinaigrette; Sautéed Spinach, Egg and Goat Cheese Crêpes with Hollandaise; Roasted Potatoes with Fresh Herbs; Strawberry-Almond Napoleon with Chantilly Cream.
Skills Covered in Class Include: Getting Familiar with French Ingredients and Cooking Techniques; How to Supreme Citrus; Making Vinaigrette and Hot Emulsions; Balancing Flavors; Blanching Green Vegetables; Making Crêpes; Selecting Potatoes; Working with Fresh Herbs and Puff Pastry; Whipping Cream.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
