Laissez les bon temps rouler! (Let the good times roll!) We'll show you how easy it is to recreate the big bold flavors of New Orleans cuisine without the andouille and crawfish!
Hurricane; "Oyster" Mushroom Po' Boys with Roasted Garlic Remoulade; Seitan and Red Bean Gumbo with Steamed Rice; Beignets with Chocolate-Bourbon Sauce. One hurricane per person is included in the price of the class.
Skills Covered in Class Include: Getting Familiar with Cajun and Creole Ingredients; Getting Familiar with Meat, Dairy and Egg Substitutes; Making Roux; Preparing Beer Batter; Selecting Mushrooms; Making Yeast-Raised Dough; Deep Frying.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
