Chilled Avocado and Cucumber Soup with Cumin-Spiced Grilled Shrimp Skewers; Pepper-Crusted Strip Steaks with Warm Tomato Vinaigrette; Grilled Corn and Roasted Red Pepper Farro Salad; Blackberry-Nectarine Cobbler with Vanilla Ice Cream.
Skills Covered in Class Include: Making Chilled Soup; Selecting and Grilling Shrimp; Selecting and Sautéing Steak; Determining Meat Doneness; Making Warm Vinaigrette; Balancing Flavors; Working with Farro, Fresh Herbs and Spices; Grilling Vegetables; Roasting Peppers; Selecting Stone Fruit; Making Fruit Fillings; Preparing Biscuit Topping.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
