Jet set to the Cote d'Azur and prepare a feast featuring the bright and fresh Mediterranean coastal flavors of southeastern France.
Pissaladière (Caramelized Onion Tart with Olives); Sautéed Bass with Ratatouille a la Niçoise; Leek and Fresh Herb Socca (Chickpea Flatbread); Apricot Financier (Apricot and Almond Cake).
Skills Covered in Class Include: Getting Familiar with French Cooking Techniques; Caramelizing; Working with Puff Pastry; Selecting and Sautéing Fish; Determining Fish Doneness; Sautéing Vegetables; Working with Fresh Herbs and Chickpea Flour; Balancing Flavors; Preparing Flatbread; Selecting Stone Fruit; Understanding Baking Ingredients; Mixing Cake Batter; Determining Cake Doneness.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
