After a long Chicago winter, we eagerly await the return of spring. Let's celebrate the arrival of longer, sunnier days with an inspiring and delicious spring brunch.
Watercress and Radish Salad with Green Goddess Dressing; Eggs Florentine Benedict with Hollandaise Sauce; Turkey Breakfast Sausage; Roasted Sweet Potato Hash; Coffee Coffee Cake.
Skills Covered in Class Include: Getting Familiar with Spring Produce; Making Dressing; Balancing Flavors; Working with Fresh Herbs and Spices; Poaching Eggs; Making Hot Emulsion Sauces; Selecting Ground Meat; Roasting Root Vegetables; Mixing and Baking Cake Batter; Determining Cake Doneness.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
