Quiche with Leeks, Asparagus and Gruyere Cheese; Dijon and Rosemary-Crusted Rack of Lamb; Warm Fingerling Potato and Watercress Salad with Bacon Vinaigrette; Strawberry Clafoutis.
Skills Covered in Class Include: Working with Gluten Substitutes; Making and Baking Custard; Rolling Out and Baking Gluten-Free Pie Dough; Selecting and Roasting Lamb and Potatoes; Determining Meat Doneness; Making Vinaigrette; Balancing Flavors; Making Baked Custard.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
