Delicious tamales are a celebrated tradition of the holiday season in Latin culture. Learn how to prepare fun and festive bundles of goodness, so you can make them for your next dinner party! You'll go home with several tamales to share with your friends, or freeze for later.
Green Chile Chicken Tamales with Quick-Pickled Onions; Winter Squash, Bean and Cheese Tamales with Salsa Roja; Pineapple-Chipotle Salsa with Chips; Mexican Rice with Chorizo.
Skills Covered in Class Include: Working with Tomatillos; Selecting and Braising Chicken; Pickling Techniques; Working with Corn Husks, Masa Harina, Spices and Chiles; Roasting Squash; Steaming Rice; Selecting and Cutting Pineapple; Balancing Flavors.
Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
